なぜ有機玉露なのか


これまでは、日本茶を取り巻く時代の変化と、小さなブランドが世界とつながる可能性について書いてきました。ここからは、OOTCの中心にある二つの問いに向き合います。

1. 有機とは何か 2. 玉露とは何か

最近、食についてのご相談を受けることが増えました。とくに多いのが、小さなお子さんのアトピーや喘息と向き合うお母さんからの声です。「 毎日口にするものを、もう一度見直したい 」「 何を選べばいいのか知りたい 」。お茶が病気を治すわけではありません。それでも、自分や家族が口にするものの背景を知り、納得して選びたいと願うのは、自然なことだと思います。有機栽培には、ぼんやりしたイメージではなく、はっきりした基準があります。

そして私にとって有機とは、農薬や化学肥料を使わないことだけではありません。土壌、微生物、茶樹、季節の移ろい。それぞれが役割を果たしながら、無理なくバランスを保つ。その状態をつくることです。ただ、有機という言葉だけで、すべてが伝わるわけではありません。誰が、どんな土で、どんな思いで育てたのか。そこまで知って選ぶことが、これからは大切になると思います。生産者の方には、私はいつもこう話してきました。丈夫な茶樹を育てるには、まず豊かな土をつくること。豊かな土が力強い茶樹を育て、力強い茶樹が健やかな新芽をつくる。その恵みを、飲む人に届ける。問題が起きてから抑え込むのではありません。病害虫が起こりにくく、茶樹が本来の力を出しやすい環境を、一年を通して整えていく。それが私たちの有機栽培です。

玉露は、新芽の魅力をいちばん深く味わうために生まれたお茶です。光を遮り、時間と手間をかけて育てることで、濃厚な旨味が引き出されます。私は、この玉露を有機の考え方のなかで育てたいと思っています。目指しているのは、強い旨味だけではありません。濃厚なのに後味は軽やかで、何杯でも飲みたくなる玉露です。辻調の茶専科やワークショップでも「 玉露の印象が変わった 」「 これなら何杯でも飲める 」という声をいただいてきました。夏は水出しで、冬は急須で。玉露を特別な日のためにしまい込まず、毎日の暮らしのなかでゆっくり味わう。そんな贅沢で健やかな時間を、提案したいと思っています。次回は「 玉露とは何か 」をもう少し詳しくお話しします。


So far I have written about how the world of Japanese tea is changing, and how a small brand can reach people far away. From here, I want to face the two questions at the center of OOTC.

1. What is organic ? 2. What is gyokuro ?

People ask me about food more often these days. Many of them are mothers caring for a child with eczema or asthma. I want to look again at what we eat every day. I want to know what to choose. Tea does not cure illness. But wanting to understand what you and your family drink, and to choose it with confidence, seems entirely natural to me. Organic farming is not a vague image. It has clear standards.

For me, though, organic means more than growing without pesticides or chemical fertilizer. Soil, microbes, tea plants, the turning of the seasons — each plays its part, and together they hold a balance without strain. Creating that state is what organic means to me. Still, the word “organic” alone does not tell you much. Who grew it? In what soil? With what intention? Knowing that much before you choose will matter more and more. I have always said the same thing to our growers: to raise a strong tea plant, first build rich soil. Rich soil raises strong plants, and strong plants put out healthy new shoots. That gift is what we pass to the person drinking. We do not wait for a problem and then suppress it. We spend the whole year shaping conditions where pests and disease are unlikely, and where the plant can show its own strength. That is our organic farming.

Gyokuro was created to taste the new shoot at its deepest. The leaves are shaded from the light and grown with time and care, which draws out a rich, concentrated umami. I want to grow this tea within the thinking of organic. And strong umami is not the whole goal. I want a gyokuro that is rich yet finishes light — one you want to pour again and again. At the tea course at Tsuji Culinary Institute and in our workshops, people have told us, “This changed what I thought gyokuro was,” and “I could drink this all day.” Cold-brewed in summer, in a kyusu in winter. Not saved in a cupboard for special days, but tasted slowly, as part of ordinary life. That is the kind of luxury — and health — I would like to offer. Next time, I will say more about what gyokuro really is.
